When you enter a map, you will not play on a "megaserver map" but on one of the many maps that has been populated with people from the megaserver - but not random people. If you are in a group, you will most likely end up on the same map instance as your groupmates, if in a guild you will end up in a map where others of your guild already are.
Eventually GW1 got rid of most of its region locks. You can change regions to wherever you want now. The only one they didn't unlock is China, because of their strict internet laws.
GW2 runs on something called "megaservers". There really only are two different servers, North America and Europe, and the named homeworld/realm/server you can select when logging into your account for the first time is not an actual server you connect to. Instead it serves as a "Team" for the World vs. World mode.
